Bartenders in vintagy vests and ties, little nooks for chatting, frosted windows and warm light.

Hotel Delmano (My personal favorite spot at the moment)

Haunted hotel-esque with high ceilings, dark wood, library ladders, framed Victorian portraits on the wall, and great service.
Drink: The Brooklyn Beauty {citrus and St Germain's elderflower liquor}, the Lady Lazarus, or the Last Word
Oh heck- just try the whole menu.
I second that - the Brooklyn Beauty is too die for... very very very easy to drink. Some would say, a little too easy.
